During the covid-19 pandemic, I started to care a lot more about food. I had always liked baking and cooking, but with so much extra time because of all the classes that got cancelled, I decided to take it to a new level. I made an Instagram page called @fitfood.by.mick where I shared all of the recipes I made. Besides that, I made a small book with healthy and easy recipes for breakfast, lunch & dinner! (in Dutch) On this page I’ll share some of my favorites!

Nut bar

Granola bar with dates

How to make:

  • 50 grams oat flakes
  • 150 grams dates (pitted)
  • 20 grams pumpkin seeds
  • Large tablespoon chia seeds
  • 1 tablespoon grated coconut
  • 2 teaspoons cinnamon
  • 3 tablespoons peanut butter
  • 1 tablespoon flaxseed
  • 25 grams almonds

Mix all ingredients in a food processor. Cover a square container with parchment paper. Press the mixture firmly and refrigerate for a few hours. Perfect snack for a heavy workout!

Pancakes

How to make: (1 person)

  • 0.6 tsp baking powder
  • 1 egg
  • 50 grams oat flakes
  • 50 ml almond milk
  • Pinch of cinnamon
  • Half a banana
  • (Half a scoop of protein powder)

Mix all ingredients in a bowl. Heat a pan with coconut oil and pour a small amount of batter into the pan. This way, you’ll get nice small round pancakes.

For toppings, you can use various types of fruit. It’s also delicious to add (plant-based) yogurt, coconut flakes, or agave syrup.

Overnight oats 

How to make:

  • 200 ml almond milk
  • Large tablespoon chia seeds
  • 45 grams oat flakes

Mix chia seeds with almond milk and oat flakes. Pour the mixture into a jar and refrigerate overnight. For breakfast, enjoy the deliciousness of overnight oats with plant-based yogurt and fruit, or simply eat it plain. This is a perfect breakfast when you have little time to prepare something in the morning!

Tip: Add cinnamon and a few slices of banana to enhance your overnight oats.

Banana bread

How to make:

  • 150 grams almond flour
  • 2 tbsp agave syrup
  • Handful of unsalted nuts
  • 3 bananas
  • 3 eggs
  • 2 tsp cinnamon
  • 1.5 tsp baking powder
  • Pinch of salt

Preheat the oven to 180 degrees Celsius. Mix all ingredients until you have a smooth batter. Cover a cake tin with parchment paper and pour the mixture into the tin. After about 50 minutes, the banana bread can be taken out of the oven, but first, check with a skewer to ensure the inside is well-cooked!

A slice of banana bread is perfect as a snack but also delicious for breakfast with a bit of peanut butter!
